Snapper grilled in banana leaf by Kalai Subramaniam, Sri Puteri’s

 

 

Grilled snapper served in a classic Malaysian style wrapped in a banana leaf. Subtle tamarind flavour and fragrance. Served with a homemade dipping sauce.

Ingredients:

1 whole fish (snapper)

1 tsp turmeric powder

1 tsp chili powder

1 tsp garlic (crushed)

1 tsp salt

2 banana leaves (you can use frozen packets – these thaw nicely)

1 tsp sugar 1 tsp lemon juice

 

Method:

1. Mix all the ingredients together and spread over the whole fish.

2. Wrap the fish in the banana leaf and leave it to marinate for 2 hours.

3. Grill for 8 - 10 min on a low heat.

4. Serve with rice

 

Dipping Sauce:

½ red onion, finely chopped

1 red or green chili, finely chopped

½ lemon

1 tsp sugar

1 tsp salt

1 cup tamarind water

 

Dipping Sauce Method:

1. Mix all the ingredients together.

2. Add additional salt, sugar or lemon juice according to taste.
