Ingredients
3 tbsp olive oil
1 tsp lemongrass
1 piece of ginger, finely chopped
2 cloves garlic, finely chopped
2 medium dried chillies, crumbled
1 large onion, sliced
2 medium shallots, sliced
1 fillet red snapper
1 tbsp white vinegar
1 tbsp soy sauce
1 tsp sugar
1 tbsp tomato paste
½ cup water
Directions
Heat oil in a skillet, add the lemongrass, ginger, garlic, chillies, onion and shallots. Fry for 3 minutes.
Add fish and fry for 2 minutes on each side. Set aside.
Mix remaining ingredients and pour over the fish. Simmer over low heat for 5 minutes.
Serve with rice.
